They have a large and small claw too. I wonder which one that was. Looking at this image, the claw seems to be the smaller one.

I wonder if it got eaten. It should have been ok to boil and carefully extract the meat without damaging the shell?

Seems these big ones have claw sizes that don't correspond to body size like the above picture suggests. Check this short video:
